Australian Eggs & Onions

A tasty main course, featuring delicious sweet onions!

Items Needed: (for 2 servings)

  • 1/2 cup white sweet onion (peeled and chopped)
  • 3 large eggs
  • 1/4 cup shredded cheese of choice
  • 1 tablespoon butter
  • 1/4 cup chopped fresh tomatoes (optional)
  • Salt & Pepper to taste (after cooking)

    In a large non-stick skillet, melt butter over medium heat. Add onions and cook, stirring occasionally, until the onions are clarified and lightly browned on the edges. (about 10 minutes or so).


    Add eggs & cheese, mix until blended. Cook, stirring and folding eggs, onions and cheese until eggs are fully cooked and cheese melted.


    Note: Cooking the onions for 10 minutes first removes the "oniony" aftertaste of the onions..leaving only a sweet "onion ring" like taste.

    Serve hot.
