Egg Breakfast Muffin

Items Needed:

(for 12 breakfast muffins)

4 eggs, scrambled

½ lb bacon, cooked until crispy

2 cups flour

1 Tablespoon baking powder

1 teaspoon salt

1 teaspoon dry mustard

½ teaspoon black pepper

1 cup cheddar cheese, grated

¾ cup milk

¼ cup oil

1 raw egg

  1. Preheat over to 400o and lightly grease a 12-cup muffin pan

  2. In a medium bowl- stir together the flour, baking powder, salt, dry mustard and black pepper. Stir in ¾ cup of the cheese, the cooked eggs and bacon.

  3. Whisk together the milk, oil and egg. Stir the liquid into the dry ingredients just until blended.

  4. Divide batter evenly among the muffin cups and sprinkle with the remaining cheese.

  5. Bake 20-25 minutes, until lightly brown.
