Ham and Cheese Quiche

1 package of refrigerated pie crust

2 cups fully-cooked diced ham
2 cups shredded cheddar cheese
2 teaspoons minced onion

4 eggs

2 cups half-and-half

½ teaspoon salt

¼ teaspoon pepper

  1. Preheat oven to 400o F
  2. Unroll pastry sheets into two 9-inch pie plates
  3. Line pastry shells with heavy-duty foil
  4. Fill with pie weights and bake for 10-12 minutes, until light golden brown
  5. Remove foil and weights, bake 3-5 additional minutes or until bottom is golden brown
  6. Cool on wire rack
  7. Divide ham, cheese and onion between the two pie shell
  8. In a bowl, whisk eggs, cream, salt and pepper until blended
  9. Pour mixture into shells
  10. Cover edges loosely with foil
  11. Bake 35-40 minutes of until a knife inserted near the center comes out clean
  12. Allow to cool for 5-10 minutes before cutting
