Deviled Eggs

12 large eggs

1/4 cup mayonnaise
1/3 cup finely chopped BBQ pork

1/2 tablespoon Dijon mustard

1/2 teaspoon pepper

1/4 teaspoon salt

1/8 teaspoon hot sauce
Garnish: paprika
  • To boil eggs, place in enough cold water to cover completely, and bring to a rolling boil over high heat.

  • Reduce heat to a lower medium boil and cook an additional 12 minutes. Promptly chill eggs so yolks stay bright yellow.

  • Remove shells from eggs.
  • Cut eggs in half lengthwise, and carefully remove yolks. Mash yolks with mayonnaise. Stir in pork, Dijon mustard, salt, and pepper; blend well.
  • Spoon yolk mixture evenly into egg white halves. Garnish with Parpika, if desired.
