"Cut out" Christmas Cookies
This is the recipe you will need to make incredible "shaped" cookies such as Christmas Trees, Santa Clauses, Bells, Stars, and simple circle cookies. It is also good of course for any holiday or occasion when shaped cookies are fun!
This recipe requires effort, but the results are worth it.
Shaped (Rolled Out) Butter Cookies:
3 cups flour
1/2 teaspoon soda
1/2 teaspoon baking powder
1 cup butter (or 1/2 butter 1/2 margarine)
3/4 teaspoon salt
1 teaspoon vanilla
Mix above ingredients (similar to making pie crust)
1 cup sugar
2 eggs
Cookie Cutters in shapes you desire
Add 2 eggs well beaten and 1 cup sugar to the dry mixture
Mix together and refrigerate for 2 hours. (until rollable)
Roll thin (1/4 inch) on a lightly floured surface using a large wooden roller. Cut with desired cookie cutters. Place on cookie sheets.
Remix into the dough the extra pieces of dough not used when making your "cut outs".
Bake at 325 degrees F preheated oven until tips are lightly brown. (about 8 minutes)
Cool, then frost with:
Heavenly Icing
1/2 cup solid shortening (such as Crisco) (DO NOT MELT)
1/2 cup butter (DO NOT MELT)
5 cups POWDERED (confectioners) sugar
3 tablespoons milk
1 1/2 tsp. vanilla
Food Coloring & Holiday Sprinkles (optional)
Again, this recipe is not the easiest to make, but it will melt in your mouth and make the best "cut out" Christmas cookies I believe you will have ever tasted.
Cream butter and shortening together using an ELECTRIC HAND MIXER (do not melt).
Do not attempt to make this icing without a electric hand mixer.
Add vanilla. Gradually add powdered sugar one cup at a time, completley blending in each cup of powdered sugar one cup at a time until all 5 cups are in. Icing will become quite dry and stiff. Add milk. Keep covered with damp cloth.
Put some icing into separate cups or small bowls, add a few drops of different food colorings to each separate bowl and stir. Frost cookies, add sprinkles (optional) and enjoy!
If making the cookies in advance, layer the cookies in containers, with a layer of waxed paper between each layer of cookies.
These cookies stay delicious when stored in sealed tupperware for many days, but they are so good, they will most likely be eaten before that!
